Pinot Noir、Pinot Gris、Chardonnayの混醸。Adelaide Hills（アデレード・ヒルズ）の複数のオーガニック畑のブドウを使用。MLF前にプレスした果汁をリスターターとして加え、瓶内二次発酵で仕上げています。熟成により酸味や還元香が穏やかになり、旨味と滑らかな口当たりが際立つスタイルへ。サワーチェリーや梅、白桃、レモンゼストのアロマに、コンブチャを思わせる複雑な風味が調和した個性的なスパークリングです。
