Gamay Noir 100%。Two Terraces（トゥーテラス）のブドウを使用。ニュージーランド全土でも栽培面積がわずか約7.3haという希少品種です。2種類のクローンをそれぞれ収穫・醸造し、約2週間のカルボニック・マセラシオンを経てブレンド。スペイン製アンフォラ「ティナハ」で熟成しています。イチゴやラズベリーの瑞々しい果実味に、梅やだしを思わせる旨味が調和。SO₂を含む添加物を一切使用せず、美しくピュアな味わいに仕上げています。
