開放式の大きな発酵槽を使用し、一部は除伷。発酵とマセラシオンの段階でルモンタージュとピジャージュを1日に2回、3週間行う。その後ワインを大樽に移し12～14ヶ月熟成させ、ろ過をせず瓶詰め。
≪テイスティング/Tasting≫
若いうちは非常にタニックですが、数年寝かせることでタンニンは滑らかになり、アロマはより複雑になります。シルキーなタンニンで味わいは柔らかく開いており、プルーンのアロマが特徴的なクラシックなサン・ジョセフです。

ゴノン家はサン・ジョセフのアペラシオンが生まれる以前より、モーヴ村に居を構えていました。先見の明があったピエール・ゴノンは白ワイン造りの可能性を信じ、1958年にマルサンヌを植えました。今日、ワイナリーは息子のピエールとジャンに引き継がれています。父の功績により、白ワインの畑として最も有名な、“Les Oliviers(レ・ゾリヴィエール)”の区画にある素晴らしい古木から、秀逸なワインが生み出されています。モーヴ、トゥールノン、サン・ジャン・ド・ミュゾルに位置する9ヘクタールの畑でワインを造っています。その内、シラーは7ヘクタール、ルーサンヌ、マルサンヌは2ヘクタールをレ・ゾリヴィエールの区画に所有しています。
The name Gonon has been a mainstay in the town of Mauves for many, many years prior to the creation of the appellation of Saint Joseph. Pierre Gonon was far-sighted in his commitment to white wine and planted Marsanne in 1958, soon after the appellation was born. Today, sons Jean and Pierre, now in full command of the winery, have some impressive older vine plants on the most renowned site for white wine in the appellation, Les Oliviers, thanks to their father. The Gonon brothers work the family’s 9 hectares of vineyards consisting of 7 hectares of Syrah and 2 hectares of Marsanne and Roussanne planted in the Les Oliviers parcel. They uphold the best virtues of the appellation system and draw from all of their historic parcels, each lending a distinct character to craft only a single white and a single red Saint Joseph cuvee.
