Pinot Noir 100%。Adelaide Hills（アデレード・ヒルズ）のSteve Thomas（スティーヴ・トーマス）ヴィンヤードで有機栽培されたブドウを使用。除梗・破砕後にスキンファーメントを行い、MLF前にプレス。冷凍保存した果汁を加えて瓶内二次発酵し、手作業でデゴルジュマンを行っています。ブルーベリーやフレッシュプラムに、チェリーコーラやドクターペッパーを思わせるスパイシーなニュアンス。旨味豊かで、泡が落ち着いた後も赤ワインとして楽しめる一本です。
