醸造：手摘みで収穫後プレスし、温度管理をしたタンクか大樽で発酵。春に瓶詰めし、リリースまで瓶熟。特別な畑、古い樹齢の樹、完全な成熟、貴腐を促進させる朝もやに続く最大限の陽光。そして、しなびた葡萄の一粒一粒を手作業で収穫し、細心の注意払って醸造、熟成を行う。
