100％ステンレスタンクで発酵。アメリカンオーク、フレンチオークで熟成。タンニンを和らげ、閉じ気味の果実味を引き出すために、平均よりやや短めの発酵とスキンコンタクトを行なう。発酵後は樽に移し、キャラメル、ヴァニラビーンズ、コーヒーの美しいフレーヴァーを引き出す。
